Cooking Class: Nola (New Orleans) Gumbo

SLA parent Courtney Chobert will be teaching us how to make Nola (New Orleans) gumbo! Please join us for this HSA fundraising event.
“My mom was from an area called Naomi, Louisiana, below New Orleans down a highway that runs parallel to the Mississippi to the “end of the road.” Before I was born there was a bar, grocery store and gas station that ran next door to my family’s house. And many fishermen would stop there on their way into town, have a drink and leave them a bushel of crabs as payment.
My family lived in a house my grandfather built, there was an orange orchard behind it. They also grew garlic, strawberries, figs and pecans. My family braided the garlic and canned the figs. They had chickens too. My family sold it all at a stand in front of their house later after the store closed.
I spent every summer there at my grandparent’s home until I was in my late teens. This gumbo recipe is originally my grandmothers. It is obviously my favorite Gumbo. My mom made it a holiday thing for us since we rarely spent the holidays visiting them, but this was on the common rotation of meals down there since seafood is pennies compared to here. My cousins and I have updated it slightly (we don’t throw in whole crabs and boned chicken anymore). Some even make their roux from a jar…but I can’t bring myself to that….I will teach you how to make a roux and can share stories of NoLa with you too. The lesson will take about an hour, the roux itself takes 20 minutes or so. The idea is that they threw in whatever seafood and meat was on hand so you can really make it your own.”
